Sidney Portilho has been one of our key partners in Brazil for several years. Known for his consistent quality and experimental edge, he provides us with both classically profiled pulped natural lots and unique micro-lots like this anaerobically fermented Yellow Catuai.

We first connected with Sidney when both of us were early adopters in the world of fermentation processing. He from a producer’s side, we from the roaster’s. From the beginning, it felt like a natural match. Sidney is not only a pioneer in processing innovation but also deeply committed to environmental sustainability, practicing regenerative farming and using organic fertilizers and pest control methods.

Here’s a little insight in how an Anaerobic Fermentation works:
-Begins with 12 hours of aerobic fermentation with wet beans
-Followed by 72 hours of anaerobic fermentation in hermetically sealed tanks, allowing only the coffee’s native microbial flora to influence the process
-Natural drying: 3 days on cement terraces, 35 days on raised beds, and a final 2-day finish in a box dryer
